Participants will have the opportunity to gain insight into the practical aspects of Israel’s farming culture from farmers on their own land. Tours can range from several days to two weeks.

Mahane Yehuda Market

This tour takes you through the hustle and bustle of Mahane Yehuda Market while giving you a taste of the hidden layers of an open-market that most visitors never experience. The tour explores the significance of the emergence of globalized food in the context of broader Israeli society and global environmental issues, as well as the emergence of organic produce and health food stores in the market in recent years. This tour can also include an exploration of local and global food through the lens of traditional religious teachings.

Israel’s Water Challenges

In this tour we discuss how and why Israel’s main water sources have been rapidly depleting and how Israel has responded with advanced technological solutions. Following a guided hike we will discuss Biblical sources on water conservation in relation to this contemporary challenge and discuss how Israeli technology is helping solve the world’s water problems in the 21st century.

The Kidron Valley

This tour investigates the environmental history of the Kidron Valley up to modern days. The tour starts on Mount Scopus, continues with a discussion about its  history and religious impact at the foot of Mount of Olives and then along the river, while discussing contemporary waste water treatment issues.

Jerusalem’s Ecological Issues

Participants will see and learn about environmental challenges and successes in the bustling metropolis that is modern Jerusalem. They will walk to various sites throughout the center of Jerusalem, such as the community gardens and the bird observatory, while passing cutting edge public transportation projects, buildings, and learning of their impact.

Desert in Israel

This tour will let you experience, first-hand, the silence of the desert.  We will share contemporary poetry, commentaries and ancient texts about this very desert. After experiencing the soul silence of the desert, the group will return to a nearby moshav (village) to participate in workshops that connect the desert experience to their everyday lives. Participants will engage in activities about green buildings and community building that will challenge them to connect the awe of the desert into values of human and environmental relations.

Israel Bird Migration

Explore the Hula Valley Nature Reserve and see thousands of birds from dozens of species. They represent a small fraction on the 500 million birds that cross Israel’s airspace twice a year. Participants will get to see not only the beauty and wildlife that the Hula Reserve has to offer, but also a piece of Israeli history.

Israeli Organic Farming

Explore the emergence of organic farming in Israel through interactive activities that link modern Israel, contemporary environmental issues, and Biblical sources to help better understand these ideas and see how they are being used in a modern context. Meet a local organic farmer, walk through his land, hear his story, taste farm-fresh organic produce, and experience the country life style by partaking in local, organic food.
